"From the latest Donna Hay mag and a MUST for us domestic goddesses... delicious and ridiculously easy... soooo yummy!!!! We might try our hand at this today as the rain continues to come down.

90g butter, softened
1 1/2 cups caster sugar
1 1/2 cups milk (any full cream milk fine)
3 eggs
1/2 cup lemon juice (about 2 lemons)
1/2 cup plain flour
1 teaspoon baking powder
1 teaspoon finely grated orange rind
icing sugar for dusting when cold

Preheat oven to 180 degrees. Place everything in kitchen whizz and process until smooth.Place in baking dish that holds 5 cups+. Bake for 1 hour until golden (may need less time - check it, goes crunchy on top but you want the inside squishy!).Dust with icing sugar when cold.


Serve with a little creme fraiche or vanilla cream and a sprig of mint.

  1. That looks delicious. The best part of donna Hay is the wonderful photography. Since I have cut out gluten....I now, admire from afar.
